Soyaki Beef Bowl with Veggies and Sriracha

Sure, we all buy pre-sliced vegetables when we’re in a pinch; they make weeknight cooking extra easy. But, the real hack is pre-sliced beef. I love buying very thinly sliced beef (intended for dishes like hot pot) from Umamicart and stir frying it up with a store-bought sauce/marinade. Paired with veggies and some rice, a full supper is on the table in no time.

While rice is going in the rice cooker, sauté asparagus and baby corn in minced garlic, olive oil, and sesame oil. (The asparagus takes longer to cook so start it before the baby corn.) When the veggies are done, set to the side and use the same pan to cook that thinly sliced beef in your marinade of choice – I used a soyaki sauce from Trader Joe’s (which is also where I found the fresh baby corn). Assemble your bowl and drizzle sriracha over the top.

This meal is kind of a mish mash of sauces and ingredients (and is meant to be a quick fix type of meal), but it’s also two things: easy and comforting.
